It’s Time for Blintzes. YUM!

Sweet or savory, they’re delicious!

Blintzes are a great treat for this time of year.  They are crepes filled with cheese and other ingredients of your choosing made for the Jewish holiday of Shavuot. We wanted to share our own recipes below — they can be made with berries or cherries for a sweet treat, or potatoes and onions for a savory blintz.

BLINTZ CREPE RECIPE (used for sweet and savory blintzes)

2 tsp vegetable oil

1 ¼ cups milk

1 cup all-purpose white flour

1 pinch of salt

1 tsp pure vanilla extract

3 drops almond extract

4 eggs, large

3 tbsp butter at room temperature

Add ingredients to blender and blend until smooth.  Heat a skillet over medium heat. Pour roughly ¼ cup of batter into the pan and swirl the pan in a circular motion until the batter is in a thin, circle in the pan. Cook until lightly golden on the bottom, then flip and cook on the other side. Remove to a plate and keep warm while you continue cooking all the blintz crepes.

SWEET CHEESE BLINTZES

SWEET CHEESE FILLING:

1 cup ricotta cheese

8 oz pure cream cheese at room temperature

¼ cup white sugar

1 egg yolk

1 tsp lemon juice

1 tsp pure vanilla extract

*optional: if you love fruit, jazz up the filling a bit more by adding a handful of berries!

In a bowl, combine and mix ingredients until smooth. Place in fridge while blintz crepes are cooking. Once the blintz crepes are ready, take the filling out of the fridge. Spread the blintz crepe out. Add a small scoop of filling at bottom center, not too near the edge, and roll once. Fold sides in and continue rolling.

BLUEBERRY OR STRAWBERRY SAUCE TOPPING:

2 cups berries (hold ½ cup out for end of recipe)

¼ cup sugar

1 Tbsp lemon or lime juice

Powdered sugar

In a saucepan, add all ingredients and mix well. Bring to boil, add remaining ½ cup of berries and remove from heat. Drizzle on top of plated blintzes. Dust with powdered sugar. Serve and enjoy!

SAVORY BLINTZES

POTATO FILLING:

Cut several potatoes into very small cubes and sauté in olive oil with diced onions, salt, pepper. When tender remove from pan, put in bowl, and add diced cheese of your choice. The cheese will melt once the filling is inside the blintz and it is cooked. Use the same recipe from above for the blintz crepes. Once the filling and blintz crepes are prepared, add a small scoop of filling at bottom center, not too near the edge, and roll once. Fold sides in and continue rolling. Add a dollop of sour cream as a topping. Serve and enjoy!
